The story of simit The simit is a circular seeded bread that enjoys enormous popularity across Turkey, Greece and much of the Middle East. Its nearest Western relative in terms of daily consumption would be the croissant, pretzel or bagel. The simit’s proliferation and cultural importance across the region, however, is such that, according to Wikipedia, the simit can vary from place to place in its “size, crunch, chewiness, and other characteristics”. Simit Sarayı, “The World’s New Bakery Café Chain”, opened its fi rst store in 2002 with the aim of promoting the simit both within its home territory of Turkey and to the rest of the world. The very fi rst batch was baked in the original store in Mecidiyeköy in Istanbul and today Simit Sarayı serves more than 650,000 guests daily, with 10,500 employees in hundreds of stores in almost 20 diff erent countries.
The stores and their customers Simit Sarayı stores carry fresh, appealing branding – with the logo “baked with love” – and come with modern designs in locations across Europe, the US, Russia and the Middle East. Prime sites include stores on London’s Oxford Street, Bond Street and Piccadilly, New York’s 5th Avenue, and Amsterdam’s Dam Square. The stores operate under two diff erent
retail and dining concepts – the bakery/ café, and the restaurant, where hot
dishes are also available. Visitors to Simit Sarayı are from every walk of life and age group. Within the UK, customers are predominantly tourists and city workers. The brand is made up of three diff erent types of store – street, shopping centre and kiosk (such as in train stations) – all of which are in locations selected for their high visibility and footfall.
