Recipes by Pushpa from the Spice Hut - Mixed Vegetable Curry Malai


2 large tomatoes finely chopped 3 cups of mixed vegetables, chopped 1 large onion, chopped 3 green chillies, chopped ½ tspn of turmeric 3 tspn of oil Salt to taste


1 cup of cooking cream 3 tbspn ground cashew nuts 1 tspn ginger paste 2 tspn garlic paste 1 tspn garam masala 1 cup of water fresh coriander


Heat the oil, fry onions until golden. Add the tomatoes and cook until soft. Add the chopped vegetables, chillies, salt, ginger and garlic paste, garam masala, turmeric and water.


Cook until all are soft then add the cream and ground cashew and cook for a further 5 minutes.


Check the curry for flavours. Garnish with coriander and serve hot.
