Never, I repeat never, use added salt. Sodium is not your friend. Just ask my doctor who rides me like a quarterhorse over high blood pressure. Serve with half a whole grain English muffin. (beef 190); sodium is 60g (beef is 70); and protein is 25g (beef is 20g). Bison is better! Please note that this meal is by no means “low calorie,” but it is packed with protein, which is the most important element of a post- bariatric diet, and pretty darn good for any-

Tip: After using the frying pan, immediately wash it up along with all utensils and set aside to drain. That is, unless you are one of those “uppity” people who have a fancy ma- chine called a “dish washer,” then just rinse well and place carefully into the contraption. One thing I have found is letting dishes pile up in the sink for “later” can be habit forming, and some of the foodstuff (like oatmeal for instance) dries solid on the bowls, even in your fancy dish washing machine. I also wipe down the whole cooking area, and am ready in case I get visitors. Hey, it could happen! Really. Even out here in the country a million miles from civilization. •
