THAI STYLE


SALMON CHOWDER 2 tablespoons olive oil


1 punnet button mushrooms, stems removed and thinly sliced 2 garlic cloves, crushed Thumb sized piece of ginger, peeled and grated


1 tomato, roughly chopped 1 red bell pepper, diced


2 stalks lemongrass, washed and cut into 5cm pieces


10 lime leaves (makrut or magrood) 4 cups (1 litre) chicken stock 1 tin coconut milk


300g salmon, skin removed and cut into 2cm pieces ¼ cup fish sauce ¼ cup lime juice


You can use any kind of firm fish in this recipe. Salmon is great because of its omega 3 content, but if you’re on a budget you can use local oily fish like snoek, which is also rich in omega 3.

SLOW COOKER BEEF STEW


1 beef roast, cut into cubes (about 3 cups)


¼ cup cake wheat flour 1 teaspoon salt ½ teaspoon pepper ½ teaspoon thyme 1 clove garlic, crushed 1 bay leaf


1 teaspoon paprika 1 tablespoon Worcestershire sauce 1 onion, chopped 3 cups beef stock


1 large potato, peeled and cut into cubes


2 carrots, peeled and cut into chunks 2 stalks celery, chopped Put the meat in the slow cooker. Season with salt and pepper, then sprinkle over the flour and mix well.


Add the rest of the ingredients and cook for four to six hours on high heat or 10 to 12 hours on low.


Enjoy with brown rice or some crusty bread and a green salad.

sea salt and black pepper to taste fresh Thai basil or coriander leaves and lime wedges to serve Heat the oil in a large, heavy-based pot over high heat. Fry the mushrooms until browned (about 10 minutes). Add the garlic and ginger and fry for a few more minutes.


Stir in the tomato, bell pepper, lime leaves and lemongrass. Cook until the tomatoes soften and the bell peppers start to wilt. Add the chicken stock and coconut milk and bring to the boil. Reduce the heat and simmer for 20 minutes.


Add the salmon, fish sauce and lime juice and cook for a few minutes until the salmon is cooked.


Season to taste and garnish with fresh coriander leaves and lime wedges.
