Get the oven on fi rst so that it heats up to 350°F (175°C) and grease up or line a small oblong loaf tin.
Ingredients: 2 or 3 ripe, peeled bananas 1/3 cup of melted butter 1 beaten egg 1 teaspoon of vanilla extract 1 teaspoon of baking soda A pinch of salt 1 ½ cups of all-purpose fl our ½ a cup of sugar
• Mash up the bananas in a mixing bowl and stir in the butter once smooth. • Mix in the baking soda, salt, sugar, beaten egg and vanilla. Mix in the fl our. • Pour the mixture into your loaf tin and bake for around an hour. You can tell if it’s cooked by sliding a knife or skewer into the middle and if it comes out clean you’re done. • Let the loaf cool on a rack and serve when slightly warm. Perfect with some custard!
