Already a veteran of the Glasgow bar scene, Dean rose to the challenge with a constantly evolving cocktail list that combines his technical skill with a sound grasp of spirits and fl avours.

In addition to bartending and training staff at Edinburgh style bar The Voodoo Rooms, Iain has created several new cocktails for the outlet and taken part in a number of high profi le competitions. Beyond his day job he continues to experiment with new recipes and fl avours, including the effects of wood ageing on different spirits.

Over the past three years Mal has helped establish the Blythswood as a premier destination for cocktails. The Blythswood cocktail book (now in its second edition) is a testament to his passion for spirits and fl avours and he is now as comfortable discussing the chemical composition of ice as the spirits on the Blythswood back bar.
