Buy it fresh, dried, salted or smoked, but follow a few basic rules so you get the best.
FRESH fish still has its natural colouring, so if the colours look as though they’re fading, forget it. Te skin should be slimy and the eyes bright. Te gills should be red and the fish firm. Most importantly, it should not smell fishy. Fresh fish has a clean sea air smell to it. So don’t be embarrassed to smell before you buy! Te price of fish varies depending on size, type and availability. Ask your fishmonger to do any boning or filleting you require - and don’t forget to take the bones home. Tese make excellent stock in under half an hour. Whether grilled, baked, fried, poached or steamed,
cooking fish couldn’t be simpler. It’s already tender, unlike a lot of meat, and all you have to do is cook it to the point of “setting” the protein - just like cooking an egg. But don’t overcook fish, otherwise it will be tough, dry and a waste of money. Cooked fish should have no translucent flesh visible and when eaten it should be moist, juicy and firm.
