Recipes for sucess?


In the world of salmon, we reported on Ronald Barge’s land-based unit at Otter Ferry, in Argyll, which went against the received wisdom of the time – that seawater pens were the only way forward. Barge, who set up his farm in 1977, was convinced that, despite bucking the trend, he was on the right track and, with predictions of a 45-tonne harvest for his unit in 1980, it seemed he had a point. Having visited Norway in 1974 Barge noted that the depth of the Norwegian fjords often enabled sites to be attached to the shore by


walkways – thus sparing numerous costs as well as time. He was therefore convinced that land-based units, despite costing more in terms of pumping water, would be at a long-term advantage. ‘We don’t have to bother with boats, we don’t have nets to clean and we don’t have to worry about seals causing damage,’ he pointed out.


While not strictly in a 1980 is- sue, this double-page spread from November 1979 cannot be missed. Put together by TV cook Zena Skinner, this selection of recipes for farmed trout, backed up by the sort of food photography that would make even the least fussy trencherman think twice about sampling the suppos- edly edible offerings, may help explain why the trout market didn’t expand as much as predicted. All the recipes seem designed to hide the flavour of the fish, while the appearance of the dishes was also hiding its appearance. One can only imagine the comments on modern-day Masterchef: ‘The ‘trout Cleo- patra’ won’t get Mark Anthony


in a flap, the ‘rainbow flan’ looks like its skin is as thick as a rhinos and even the ‘pan- fried trout’ look like they’ve been incinerated!’
