A rise in the number of ships on European rivers has led to more late availability in the market, according to Avalon Waterways UK boss David Binns. In previous years, he said demand had outstripped supply and early booking had always been encouraged. Celebrity Cruises has signed up two Michelin-starred chefs for a stint on Celebrity Eclipse. Adam Simmonds and Robert Thompson will return to the ship for a 14-night Mediterranean sailing on August 30, after their involvement in a Taste of Modern Luxury sailing to Le Havre earlier this month. Simmonds was one of the winners of the Great British Menu TV show in 2014, while Thompson is one of the youngest chefs in the UK to have secured a Michelin star.
