Brahman Carcass Evaluation Program Documents Improvement

R

ESULTS OF THE 2013 BRAHMAN CARCASS EVALUATION Program showed documented improvement in the ability of purebred Brahman steers to per-

form, grade and yield at or above beef industry stan- dards, announced the American Brahman Breeders Association (ABBA). “Brahman breeders are doing some extraordinary

things towards carcass improvement,” says Chris Shiv- ers, executive vice president of the ABBA. “Brahman breeders and the ABBA have spent the past several years working to provide proven, documented carcass performance of our steers to prove that purebred Brah- man cattle hold the traits that appeal to all segments, from the consumer all the way down to commercial producers.” Results from the 2012-13 ABBA Carcass Evalua-

tion Program show the feedlot, carcass and fi nancial performance of 105 purebred Brahman steers. This

evaluation, sponsored by ABBA, is an extensive carcass evaluation program with data verifi ed by Graham Land and Cattle, Sam Kane Beef Processors and Texas A&M AgriLife Extension professionals. Each steer is evaluated on an individual basis for fac-

tors affecting profi tability, carcass merit and consumer acceptance: average daily gain, ribeye area, carcass weight, marbling score and tenderness. Brahman breeders from Arizona, Louisiana and

Texas participated in the program. The steers entered the feedyard in the fall of 2011 and were followed throughout the feeding and harvesting period. Cattle were harvested in summer 2012 and winter 2012 based on weights and fi nish. On average, the steers entered the feedlot at 497

pounds and were harvested at a live weight of 1,231 pounds with an average of 281 days on feed. The group had a 2.6-pound average daily gain. The steers produced an average dressing percent-

age of 64.3 percent, which is higher than industry averages. The steers had an average of .37 inch back fat, 13-square-inch ribeye area, and a ribeye area to carcass-weight ratio of 1.7 square inches. Seventy-nine percent of the carcasses graded Choice

or Select, with an average USDA Yield Grade of 2. The group averaged a Warner-Braztler shear force score of 8.8 pounds, very near the industry standard of 8.6 pounds, which is “very tender.” Each steer was evaluated for feedlot performance,

grade, and yield and assigned an index value based on their individual carcass merit. Steers from V8 Ranch, Hungerford, took 9 of the top
