Roasted Vegetables

INGREDIENTS 1 green bell pepper
3 yellow squash
1⁄8 c. oil (canola or olive) DIRECTIONS
1 T. butter
1 red or yellow bell pepper 1 T Italian dressing 1 onion
1 tsp. salt
black pepper to taste Red pepper flakes (opt.)
Wash and slice vegetables about ¼ inch thick. Add oil, Italian seasoning, salt and pepper in a large bowl (need plenty of room to toss and coat all the vegetables). Spread mixture on a large sheet pan or grill pan. Give them plenty of room to toast in oven at 400°F. for 45 minutes. Flip vegetables every 15 minutes to cook evenly (I like mine a little brown on the edges). You can also cook them on the grill in foil or on a grill pan. They will cook faster.

INGREDIENTS
Large pancakes (1 per face) 3 orange slices ½ cherry tomato
DIRECTIONS
Make pancakes in advance;set them in oven to keep warm. Poach or fry eggs. Place pancakes on a plate with eggs for the eyes, orange slices for ears and mouth and a tomato half for the nose.
