Celebrity chefs continue to abound. Wolfgang Puck’s CUT restaurant in London’s newest luxury hotel, The Dorchester Collection’s young-look 45 Park Lane, is a haven of great beef, from the UK, plus Chile and USA. Puck will also supervise the food at The Dorchester Collection’s Bel-Air Hotel, re-opening in Beverly Hills this November. He already has a Cut restaurant, too (a favourite with Mr and Mrs Tom Cruise) at The Beverly Wilshire, a Four Seasons Hotel – whose new GM, Ben Trodd, has just relocated from Seattle. Culinarians Alain Ducasse and Nobu both have so many restaurants around the world one wonders if they are trying to out-Mac McDonald’s. Pierre Gagnaire is another peripatetic talent, with eponymous restaurants at InterContinentals in Dubai and Tokyo; The Lotte, Seoul; and at Mandarin Orientals in Hong Kong and Las Vegas, plus his original, at Hotel Balzac, Paris.


France traditionally prides its food. Stéphane Tillement, who was with British Airways for a long time, is CEO of Bordeaux-based outgoing Mauriac Voyages as well as the incoming Wine Tour In France. He says ‘for 2012 we will be covering all the best regions of France, plus Paris. Multi-regions work well for VIPs, particularly for groups of families or friends from Brazil, China and India’. He works with Dassault Falcon Jet China and with major hotels around the globe as their ‘culinary ambassador’ in France.


Virtuoso’s Taste the World is currently theming Food & Wine. Its Journeys for Food and Wine Connoisseurs include culinary tours to Argentina, with wine and tango included; Colombia, with coffee and a visit to Bogota’s famous gold museum; Ecuador and the Galapagos, including a seven-night cruise.

For those interested in Italian cuisine, a bespoke tour arranged by Orient-Express can introduce the flavours and wines of many regions, including Sicily. The memory of breakfasting on the terrace of Grand Hotel Timeo, looking across at Mount Etna, will never fade, nor will the Spaghetti Elizabeth Taylor, a best-seller at Hotel Splendido, Portfino. Also back on mainland Italy, the Caprese, followed by Bistecca Fiorentina, in the medieval wine cellar of Castel Monastero, near Siena, are world-beating.
