Ovens with the best thermal efficiency are those that enable minimising energy losses during operations. “In short, to be energy efficient, the ideal situation is to be equipped with a compact oven, using convection as baking mode, enabling it to be powered by an electrical source, and equipped with the latest technologies to optimise operations,” Marie explains. Åsa adds: “The electric drive ovens are most energy efficient because the heat generated by the heating elements can be directly used and circulated inside the oven. In the case of the oil and gas driven ovens, there is an intermediary step when the energy is transferred from the warm air generated by burning the fuel, either gas or oil, to the warm air which is used bake by using a heat exchanger having losses and reducing the energy efficiency of the whole heating system.” Just like in all other businesses, sustainability will be a key factor for decision makers in the future. It is important for all actors in the business to keep this point high on the agenda. Marie rounds it up: “To bake more sustainably, we believe that electrical ovens will be an interesting solution to look at in the future as it could enable both to reduce CO2 emissions as well as to offer options to recover part of the waste energy. We also believe that flexibility could play an important role in the coming years.”
