“More consumers are purchasing pastry and bread in Pacific Asia”
Traditionally, in India, bread has been packed in wax
paper. However, due to the increased demand, almost 80% of all bread sold in the region is now packed in plastic films made out of polyethylene or polypropylene with high barrier composites.
The most well-used packaging technologies which help extend the shelf life of baked goods include oxygen barrier materials, modified atmosphere packaging (MAP) or freezer- compatible packaging. The goal is to find the best solution for a particular product that helps decrease the primary modes of deterioration – water loss or gain, oxidation and microbial growth.
Growth in Asia
According to studies by market research company, Euromonitor International, more consumers are purchasing pastry and bread in Pacific Asia and the demand for specific packaging solutions to ensure the products have a long shelf life is increasing accordingly. Euromonitor says that the total market for packaged foods in Pacific Asia is expected to increase by 3.5% per year by 2023; in many Asian countries, sales of packaged baked goods have been increasing steadily since 2011. KBV Research forecasts even greater growth in the region,
but more specifically for frozen baked goods. By 2024, it predicts that market growth in Pacific Asia will increase by an annual average of 10.4%. In India, the increase is expected to be around 13%.

Nicole Meierotto, Manager Media Relations at GEA, told me that both product protection and shelf life of baked goods are high on the list of priorities for GEA’s bakery customers. However, she went on to highlight the ongoing sustainability challenges that are being faced by all sectors of the food industry. For the bakery sector this requires careful consideration about packaging material choices, with a move to recyclable or alternative materials – such as paper or other fibre-based solutions. According to Nicole, the bakery sector is also exploring how it can use less packaging material without this having an effect on its vital functional properties. “Today, the cost and availability of the packaging material still plays an important role in the selection of the packaging system,” continues Nicole.
