ventional technologies used to create snack bars did not allow this. So, the team at Torr Foodtech went right back to the drawing board to fi nd a new production solution and the result was iWeld. “The ingredients used in the iWeld process need to
be in a dried form – too much humidity in the ingredi- ents will not work well in this process,” explains Vered Kirsch, VP Marketing & Business Development at Torr FoodTech. “The iWeld technology also requires 70% less ener-
gy than that needed by a typical snack bar production line, so it can also be considered to be a more sustainable snack production technology. Because iWeld has eliminated the traditional reliance
on sugar as a binder, it also means that there is no need to stick to a sweet profi le, opening up the possible ingre- dient combinations, which could also have a savoury or salty profi le, for example. The sky really is the limit for the fl avour profi les that are possible with iWeld,” says Vered. The key to the success for iWeld was in fi nding the
right balance between ultrasonics and compression operations to get the right result. No heating of the products occurs so the integrity of the ingredients is maintained. Torr received Round A investment from Mondelēz
International and Strauss Group-one of the largest food manufactures in its home market, Israel and to- day snack bars made with the iWeld technology are available from Mondelēz in the US, and in Israel under Strauss’s Upland brand, in addition to its own PREST- EEZ range which includes options suitable for vegans and also 10g protein bars. Is innovation key to success in the healthy snack
market? It certainly is a sector of the market where it pays dividends to be a bit different. Today’s con- sumers have a much better understanding about the labels on their snack products and so it is important to keep it clean. With companies like Torr FoodTech making such big leaps in the technology that is being employed to help create clean and healthy snack bars, it doesn’t pay for any producers to rest on their laurels.
