Serves: 4 Prep, time: 10 mins Cooking time: 50 mins


INGREDIENTS: For the chicken -


• 4 tbsp marmalade • 1 tbsp ginger, finely chopped


• 3 garlic cloves, finely chopped


• 2 tsp dijon mustard


• salt and freshly ground pepper


• 50ml (2floz) orange juice


• 1 tbsp olive oil


• 8 chicken pieces - thighs or legs


For the garnish - ^


• 4 spring onions, finely chopped


To serve - • Mashed potato


METHOD:


• Pre-heat the oven to ISOD/gas mark 4.


• In a bowl, combine the marmalade, ginger, garlic, mustard, salt and pepper and orange juice, mix well. Add the chicken and toss to coat.


Line a baking tray with kitchen foil and tip in the chicken and marinade.


Cover with foil and bake for 30 minujes.


Remove the top foil, baste the chicken with the sticky glaze and bake uncovered for 15 to 20 minutes until the chicken is nicely browned but beware of burning.


Add the spring onions near the end of cooking to warm through.


Season well and serve with mash.

THERE was a most appreciative audience for Trinity Drama Group’s presentation of “Dead Ringer” by Charles Ross over three nights at Trini­ ty Methodist Church Hal!, Clitheroe. Produced by Joan


Willock, the play opened with a dour prime minister preparing for a general elec­ tion. With a 9% majority


shown by the opinion polls confidence is high until, in the presence of two cabinet ministers, he keels over, dead of a suspected heart attack. Disaster! The anticipated majority


wouldn’t survive such an event. What to do ? Answer: get a look-a-like to play the part for three days. The cast kept admirably


straight faces as the plot developed, with the three cabinet ministers, played by Helen Goles, Anita Kelling- ton and Steuart Kellington, jostling for kudos and pro­ motion, while “Prime Minis- ter”Kim Groydon’s charac­ ter developed a liking for the reins of power. Bridget Smith, in charge

Valley star in Pendle Opera's next show


PENDLE OPERA will present its 33rd production, Donizetti’s “Lucia di Lammermoor”, on March 8th, 9th, and 10th at the Mechanics Theatre, Burnley. This challenging work is rarely,


performed by amateur groups - indeed 50 years ago it was seldom performed anywhere. I t was the coming of singers such as Gallas and Sutherland, capable of dojng vocal and dramatic justice to the demanding role of Lucia, that brought a revival of interest in the opera, which many consider to be Donizetti’s greatest work. Pendle Opera tackled it in 1982,


to considerable acclaim, and are keen to get their teeth into the gruesomely improbable plot again. I t involves the usurping owner of a Scottish castle; a hero­ ine betrayed by a treacherous brother, who eventually goes mad and murders her husband; the ghost of a young woman mur­ dered long ago by one of the clan; and lots of blood!
