joined the kitchen staff a t the Brown Cow, Chatburn, and has lots of new and exciting ideas for the coming months. Peter and his wife, Claire, are both originally from Preston. Peter has worked as a chef in and around that area for 14 years, spending time a t Park Hall Hotel, and Malt House Farm, both in Chorley, the Novotel, in Preston, and a t 25 became head chef a t the Red Cat, Blackburn. His preference, however, is for


co u n try pubs and re s tau ran ts where he thinks there is more scope for new ideas and customers are more appreciative of well-cooked and tasty food. He loves cooking traditional


dishes, b u t if someone asks for something off the menu he will endeavour to make if for them there and then or certainly for their next visit. He is th r illed to be working


alongside P e te r and Mary Hodgkinson, and son Luke, who runs the bar, knowing th a t the team values its customers and is proud of the quality of the food. The new a-la-carte menu has 11


choices for main course at varjdng prices, including the popular surf and turf. The quality bar food includes six choices from the sea, six items from the griddle and four vegetarian dishes, while there is a special children’s menu.

The Sunday menu served from


noon to 8 p.m. is very popular with the Brown Cow customers and gives a choice of three starters and four main course, including roast of the day. Of course, sandwiches and hot


dishes are served throughout the week. This recipe is a favourite of


Peter’s which he introduced on St Valentine’s Day and would like to share with you. Ingredients (serves two)


• 2 X 8oz loin steaks • 200g grated Stilton cheese • 2 tbsp olive oil • 50g butter • half pint champagne or


sparkling white wine • 2 tsp chopped parsley • 2 tsp chopped fresh mint • 500g (10) skin-on washed new


potatoes • cracked black pepper • ground sea salt


Method 1. Cook new potatoes gently in


salted water. 2. Meanwhile, heat two tsps of


the olive oil in a frying pan. 3. Season the pork and sear on


both sides, remove from pan and place in shallow roasting dish or tin. Cover the pork with the Stil­ ton and place in a moderate oven for approximately 20 minutes or until thoroughly cooked. 4. In the frying pan melt the


b u tte r together with the juices from the pork and olive oil. 5. Pour in the champagne and


reduce by half, over a high heat. 6. When th e p o ta to es are


cooked, drain, add mint and remainder of olive oil and coat well.


7. Lay p o ta to e s in centre of


plates, place pork on top and driz­ zle with champagne sauce. Garnish with parsley. Chef’s tip: Serve with fresh veg­ etables or crisp salad.

Well-being is something we all strive for but few could put into words exactly what it means. The dictionary definition is 'a contented state of being happy and healthy and prosperous'.


Measuring your well-being is therefore completely personal. One persons 6/10 would be another persons 8/10, It is however, no wonder ‘well-being’ has been a buzz word for some time now - the quest for contentment within the stresses and strains of modern living.


There is no doubt there is an element of luck. What life throws at us certainly impacts on our overall well-being. However, even more important is our state of mind (and body) and there are steps you can take to improve your overall well­ being.


There are a multitude of books written by experts offering advice on how to improve all these aspects of your life. Much of the advice changes in line with the times and latest fads, but the one consistent message is that exercise plays a vital role.


Good health is not merely the absence of disease but soundness of mind, body and spirit. The effects of exercise on your mind and spirit are often overshadowed by those on your body but are nonetheless tangible.


The challenge is to find some forms of exercise that work for you - to achieve your desired level of fitness and more importantly, that you enjoy. As with many aspects of life the choice on offer now is oveavhelming and there really is something for everyone.


Pendle Leisure Trust operates Pendle's leisure facilities including Pendle Leisure Centre in Colne, Pendle Wavelengths and Seedhill Athletics a Fitness Centre in Nelson and West Craven Sports Centre in Barnoldswick. They operate a health a fitness membership scheme (Active) at all these facilities for £30 per month (less for senior citizens, students etc).
