More than 80 different grape
varieties are authorised for port production, but the key compo nents are Touriga National, T in ta Barocca, Touriga Francesca, Tinta Roriz (Spain’s Tempranillo) and Tinta Cao. What makes port wine special is that it is a ‘fortified wine’, where the wines’ normal fermentation has been halted by the addition of spirit before all of the grape’s natural sugars have been con verted to alcohol. The result is a red (or whitel)
wine tha t is sweet and with an alcohol level somewhere between 16.5 and 20% by volume. There are two basic genres of
port; those th a t are wood (or cask) aged and those th a t are destined to be bottle aged. Ports designed to be aged in bottle spend a short period in oak casks (perhaps two or three years) before being bottled un-filtered, requiring something close to 20-, 25 years to reach' maturity. Wood-aged ports are f iltered and therefore generally ready to be drunk when bottled. There are several different
styles of port within these two genres, each of which with indi vidual characteristics and merits. The list below gives you a brief idea of the styles and some rec ommended producers for you to look out for. RUBY - Usually the cheapest
and simplest style of port, aged in bulk for a couple of years before being bottled young while it still has plenty of its zesty per sonality. Two producers making reliable Ruby Port are Dow’s and
Cockburn’s. TAWNY - This term applies
to a largish range of ports that have spent varying lengths of time in wood, losing colour and taking on a characteristic tawny- brown hue. Lots of Tawnies are bottled with an indication of age on the label, 10,20, 30, and over 40 years old can be found. What tends to happen is th a t the longer the port spends in wood the more its taste moves from sweetness to a slightly drier style, also taking on dried fruit, fig and date flavours as well as subtle oaky tones. Ten-year-old Tawny is the favoured drink at the port vineyards, where they choose to serve i t chilled as an

expensive, sought-after, and traded style of port actually only accounts for around 1% annual of port exports. I t is only made from the finest vineyard sites in exceptional years .when the har vest is ‘declared’ as a vintage, perhaps only three times a decade. Wines from a single year are blended, then aged, for a cou ple of years in wood before being bottled unfiltered, destined to be aged for a further 20-25 years to reach their peak drinking. This style of port needs decanting to remove it from the sediment that it throws in the bottle. Excellent vintages to look out for are 1963, 1970,1977,1985,1994 and 1997. My favourite producers include Taylor’s, Fonseca, Warre’s Gra ham’s and Niepoort. COLHEITA - This is a port
from a single vintage that spends at least seven years (but in most instances this period can be for decades) in wood before being fil tered and bottled. In effect Col- heita’s are vintage Tawny ports. These fabulous bottles take on incredible complexity and are fairly rare, yet are relatively inexpensive compared to Vintage Port. The important thing to look for is the bottling date which must be s tated on the label to allow you to see how long it has been aged before release. The great producers of Colheita ports are Niepoort and Krohn. LBV - This stands for Late
Bottled Vintage, of which there are two types; the regular sort is filtered and requires no decanta tion, and the second type is known as Traditional LBV, which is unfiltered, capable of bottle-ageing for a decade or so, and requires decanting. LBV’s are from good, but un-declared
. vintages that spend between four and six years ageing before bot tling. Krohn, Dow’s, Grahams, and Taylors rate highly in my experience. VINTAGE CHARACTER -
This style is the equivalent of a ‘super Ruby’ that has stayed in wood for up to five years before being filtered and bottled. I t is a less popular style nowadays as many port houses have elected to give this style a house brand- name instead, like Warre’s War rior, or Graham’s Six Grapes. CRUSTED - This is a fairly
recent creation, so-called because of the heavy crust or sediment which it throws. I t comes from a blend of vintages and is bottled young and un-filtered and after a period of several years’ bottle age can take on many of the charac teristics of Vintage Port a t a fraction of the cost. The date on the label refers to when it was bottled. Hunt out a bottle of Graham’s Crusted 1997 if you can find it - it won a Gold Medal at this year’s International Wine Challenge. SINGLE QUINTA - Quinta
is the term for a wine-making farm and a Vintage Port is made from a blend of several farms. In years not deemed of high enough quality to be declared as a vin tage year, certain farms in excep tional sites make vintage style ports good enough to be declared

in their own right. These are Sin gle Quinta Ports. My two favourites are Taylor’s Quinta da Vargellas and for me the u lt i mate: Quinta do Vesuvio.. WHITE PORT - Made from
white grapes and fortified to only around 16% alcohol, even those labelled as dry white usually have a certain amount of residual sugar and are therefore sweet. When aged in wood for several years they take on fantastically complex flavours akin to old Amontillado sherries. I recom mend Churchill’s Dry White for the drier style and the exception al Krohn White Port for those looking for more complexity and sweetness. Chilled as an aperitif and served with a handful of toasted almonds they are a deli cious drink. Earlier this summer I spent
time travelling along the Douro and had the good fortune to visit the delightful Quinta owned by the family-run firm of Wiese & Krohn, run by a brother and sis
ter team where she makes the port and he sells it. The highlight of the visit was a tasting of Col- heita’s including bottles from 1960, ’65, ‘70’,76 and 1994 as the cream among a dozen vintages spanning four decades. The 1965 in particular rates as one of the finest and most complete bottles it has ever been my good fortune to tas te. Layer upon layer of maturfe fig, prune, chocolate, tobacco and raisins are under pinned by vanilla oak and the most sublime balancing acidity th a t make this a vintage with many years still to live - if you are looking for something special to drink on Christmas Day then Krohn Colheita 1965 at around £45 a bottle has to be the ideal candidate. But please don’t limit your

theme. From minimal to lavish for maximum impact all you need are some simple materials. Use a plain white bowl or wicker basket and a block of Oasis. Put the Oasis into a large plastic pot - yogurt or margarine tub, pop into the container and cover the Oasis with greenery until you have the right shape. Then work some magic with twists of silver ribbon, small white baubles, fake white or creamy coloured flowers and some silver twigs. Use classic white candles in tall holders to complete the picture.
