EXPLORE SPAIN’S SHERRY TRIANGLE

Just north of Cádiz, the Andalucian cities of Jerez de la Frontera and Sanlúcar de Barrameda and the town of El Puerto de Santa María make up Spain’s Sherry Triangle: 54sq miles of vineyard-dotted hills and 17th-century bodegas producing the country’s finest fortified wines. Tours are on offer year-round (except in August, when most close) explaining the art of fermenting and ageing palomino, moscatel and pedro ximénez varieties and include tastings paired with jamón. Jerez de La Frontera, home to Tio Pepe (tiopepe.com) and Álvaro Domecq (alvarodomecq.com), is best known for its fino, a sherry with hints of almond and herbs, and for its oxtail slow-cooked in sherry. Sanlúcar de Barrameda, meanwhile, is the place to go for chamomile-scented manzanilla.

GETTING STARTED: From Jerez de la Frontera, it’s a 20-minute drive to El Puerto de Santa María and a 30-minute drive to Sanlúcar de Barrameda. DON’T MISS: Dating back to 1650, Bodegas Tradición (bodegastradicion. es) is one of the region’s oldest wineries. Come for the extra-aged sherries (most bottles are at least 20 years old); stay for the art collection, featuring Goya and El Greco. JV

58 NATIONALGEOGRAPHIC.CO.UK/FOOD-TRAVEL STROLL THE LANCASHIRE CHEESE TRAILS

Lancashire has three official cheese trails: Crumbly, Creamy and Tasty. The latter pays homage to the region’s aged cheeses and focuses on Beacon Fell traditional Lancashire cheese, a PDO (protected designation of origin) product. This route explores the county’s cheesemaking heritage, circling the ‘milk fields’ that have dominated the landscape since the 19th century. It skims past small fields — separated by hedgerows — whose grass is credited with giving the cheese its buttery texture, nuttiness and acidic tang. Naturally, there are stops where you can taste the cheese, too.

GETTING STARTED: The six-mile loop begins and ends in the village of Inglewhite at The Green Man at Inglewhite pub (thegreenmanatinglewhite.co.uk), which serves regional cheeses. DON’T MISS: Sample raw cow’s milk cheeses at Mrs Kirkham’s Farm Shop (mrskirkhamscheese.co.uk) and ask for a tour of the dairy. EB

SAMPLE SAUSAGES IN LOWER SAXONY

The German state has a long history of pig farming, making it great for sausages. There’s no official trail, but this route takes in a couple of sausage hotspots that are easily linked up by train or car. The winters are wet here, but if you’re keen to sample sausage dishes involving kale, you’ll need to time your trip for after the first frost in November.

GETTING STARTED: Begin at the farmers’ market in Göttingen with an eichsfelder feldgieker, an air-dried sausage. Next, head north to Braunschweig for bregenwurst, a fatty pork sausage that used to contain pig or cattle brain (now forbidden) and is eaten with stewed kale. In Hannover, order knipp, a delicious mush of pork-and-oat- groats sausage served with bread or potatoes and a fried egg. DON’T MISS: Butcher Karen Klemme, at Hannover’s historic indoor market. She stocks an impressive selection of regional and international sausages. CD
