COCONUT & CHOCOLATE SAMOSAS
These indulgent treats are a favourite of Bako Ranarivelo, our Finance Manager in Madagascar!
PREPARE 20 minutes COOKING TIME 15-20 minutes OVEN TEMP 180°C / Gas mark 4 SERVES 8
INGREDIENTS • 150g butter • 100g caster sugar • 1 whole egg and 1 egg yolk, beaten • 15g plain flour • 20g cocoa powder • 100g desiccated coconut • 30g dark chocolate, roughly chopped • 1 tsp vanilla essence or cinnamon • 1 pack of filo pastry • 100ml peanut oil (don’t need if using oven)
In a bowl, cream together the butter and sugar. Gradually add the beaten egg mixture to the bowl and mix well.
Add cocoa powder, flour, coconut, chopped dark chocolate and vanilla (or cinnamon). Chill the mixture for 10 minutes in the fridge to firm up.
Cut a wide strip of filo pastry and fold the bottom of the strip into the middle.
Place a ball of mixture in a corner at one end and fold the leaf over it, forming a triangle.
Repeat this, folding along the pastry until they form neat triangles.
If frying, heat the oil in a frying pan, then fry the samosas on each side for 1 minute. Blot with kitchen roll to absorb the surplus oil before serving. If baking, cook them in a preheated oven at 180°C / gas mark 4 for about 15-20 minutes, turning halfway.
