CARAMEL-CHOCOLATE SWIRL CRACKER CANDY PREP TIME 30 MIN. – READY IN 30 MIN. + CHILL TIME – SERVINGS 8


Baking spray 40–45 saltine crackers


½ cup (1 stick) butter, cut into pieces and room temperature ½ cup granulated sugar


½ cup packed light brown sugar


STEP 1 Line a rimmed baking sheet with foil and coat with the baking spray. Arrange the saltine crackers in a single, solid layer on the baking sheet, breaking to fit if necessary. STEP 2 In a large microwave-safe bowl, microwave the butter 1 min., until melted. Whisk in the granulated sugar, brown sugar, extract, salt, and vinegar until smooth. Microwave, uncovered, 6 min., in 2-min. intervals, whisking thoroughly in between. Microwave 1–2 min. more, until slightly more amber in color, checking every 30 sec. STEP 3 Whisk caramel, then carefully pour over crackers, spreading to cover them completely. Tap pan gently. Let stand until caramel hardens. STEP 4 Meanwhile, in a small microwave-safe bowl, microwave the dark chocolate chips in 30-sec. intervals, until melted, stirring in between intervals. Dollop dark chocolate over caramel. Repeat melting with the white chocolate chips. Dollop over caramel. STEP 5 With tip of paring knife or skewer, swirl chocolates together over surface of caramel. Refrigerate until chocolate sets. Break into bite-size pieces and package immediately or store in an airtight container.
