You can eat every part of a root vegetable, from the root at the bottom to the leafy greens at the top. The root is the most nutritious because it absorbs vitamins and minerals from the soil (that’s what helps the plants survive in cold weather).
Root vegetables are naturally sweet but have a low glycemic index, meaning they won’t cause a blood sugar spike. Their sugars caramelize when roasted, so they taste even sweeter.
