Allow time for preheating. Just like your oven, the fryer works best when it’s nice and hot.
Use cooking spray. Coating the basket and your food with cooking spray keeps foods from sticking and helps them get golden and crispy.

HOW TO COOK DRIED BEANS
BRFROZENOWN RICE This brown rice goes from
frozen to fluffy as it steams in the microwave. Find it in the frozen food aisle.
We use a slow cooker to cook the Slow Cooker Cajun Red Beans and Rice on page 40, but you can also simmer them (or any bean) on the stove. Place soaked and drained beans in a large Dutch oven. Add aromatics and cover with water by about an inch. Simmer 1-3 hours, tasting for doneness after 1 hour and adding more water if needed. Drain, cool, and freeze in 1½-cup portions (the size of a standard can) to use anytime.

Work in batches as needed. Leave enough room in the basket so hot air can circulate around the food.
