112 MARCH 2018

No piping bag? Just scoop the filling into a resealable plastic bag and cut off one of the corners.

STEP 1 Peel the eggs. Trim bottoms so eggs sit upright. Cut off top third of eggs, reserving egg white tops. Gently remove yolks and place in a medium bowl. STEP 2 To bowl with yolks, add the mayonnaise, pickle juice, mustard, and garlic powder. Season with salt and pepper. Mash with a fork until very smooth. Transfer yolk mixture to a piping bag. STEP 3 Pipe yolk mixture into egg white bottoms to fill cavity ½ inch above rim. Quarter carrot slices to form 12 triangles. Stud yolk mixture with capers to form eyes and carrots for beaks. Place egg white tops on yolks. Use dill sprigs to give chicks eyebrows, beards, mohawks, or wings.
