HEALTH BEGINS IN THE KITCHEN

by Dr. Joanne Mumola Williams www.FoodsForLongLife.com

INGREDIENTS 1 bunch of asparagus or 16 medium spears 1 tablespoon extra virgin olive oil

1/8 teaspoon salt 1/8 teaspoon garlic powder

¼ teaspoon black sesame seeds

4 wedges fresh lemon

DIRECTIONS Preheat oven to 425 degrees F. Prepare the asparagus. Trim off the tough bottoms of each spear with a knife or bend the bottoms until they snap off. Place the asparagus in a large, shallow baking pan and arrange in a single layer. Drizzle with olive oil

This is our favorite way to prepare asparagus. It’s healthy, low calorie, easy to prepare, and can be served as an appetizer or a side dish. We also place these tasty roasted asparagus over a main course salad or a bowl of rice or quinoa. I love the contrast of the black sesame seeds against the bright green young spears and a squeeze of lemon. It provides just the right amount of acidity.

and sprinkle salt and garlic powder over the asparagus. Shake the pan back and forth un- til the spears are well coated. Roast for 12 to 15 minutes, shaking the pan half way through, or until asparagus are lightly brown, fork tender and crisp.
