LOVE LOCAL

It’s a new year and that means a fresh start. But if your culinary skills are lacking, fear not. FOODLOVER spoke to 3 professional chefs to get their top tips for enhancing your confidence in the kitchen...

Kit Davies THE WELLINGTON BOSCASTLE

What’s Your Signature Cooking Style? Simple. Tasty. Seasonal.

Your Essential Kitchen Tool? A sharp chef’s knife.

Top Tips For FOODLOVERS:

❤ Keep your knives sharp to improve their performance.

❤ Cleanliness is key. A clean surface equals a clean brain, so make sure you wipe down surfaces and keep your equipment in order.

❤ Enjoy cooking at home. Find great recipes in magazines and online and follow them to the word. Slowly try more complicated dishes bit by bit until you notice an improvement.

Foodie Prediction for 2019? I’d like to see less fuss on menus and more gastro pub flavours.

New Year, New Skills

Nick Evans RICK STEINS COOKERY SCHOOL

Signature Style? Passionate. Simple. Intuitive.

Essential Kitchen Tool? It has to be a good chef's knife. We would quite literally be nothing without it. Alternatively, a really good blender that will puree anything.

Top Tips For FOODLOVERS:

❤ Make curry paste in large batches. It doesn't take any longer, it blends down better in the machine and you can freeze it in small batches afterwards. Do this with 3 or 4 different pastes and you’ll have the base to 4 different curries at a drop of a hat.

❤ Don't be scared to experiment - disregard the rule book and try different things. The worst that can happen is that it doesn't taste good and then you know not to do it again!

Foodie Prediction for 2019? Plant based diets will be bigger than ever.

This is on a massive upward trajectory - look out for Seitan (a wheat-based meat substitute) becoming more and more popular.

Matt Mason JACK IN THE GREEN

Signature Style? Simple. Respectful. Resourceful.

Essential Kitchen Tool? With a reliable meat probe or thermometer, you’ll never overcook a piece of meat again.

Top Tips For FOODLOVERS?

❤ It’s all in the planning. Plan ahead and you’ll stay on top of all your dishes.

❤ Get out there and experience as many styles of cooking and as many restaurants as you can. Learn what it is you love and how to recreate it at home. Cooking is always best when it comes from the heart.

Foodie Prediction for 2019? I think we will see more natural ingredients and unique artisan producers emerging. In terms of crockery/ceramics, we may even see a nod to Saxon times with wooden serving platters and serving cutlery.
