ELIN’S HAVREKAKOR RECIPE MAKES 40 BISCUITS
200g salted butter, room temperature 180g granulated sugar 120g plain flour 120g porridge oats 1 tsp bicarbonate of soda Handful of raisins or chocolate chips (optional)
1 Preheat oven to 175C/160C fan/gas mark 4.
2 Mix all ingredients together and form a dough, by hand or in a mixer, making sure that all ingredients are well mixed in with the butter.
4 Roll out to approximately 40 small balls, size of a small bouncy ball.
5 Place them on a lined baking tray and flatten them a little with the palm of your hand. Space well apart, as they will spread while baking.
6 Bake them for about 12 min.
Leave them on the baking tray to cool down.
