After rising to the top as a product developer for a number of well-know baking brands, Barnsley-born Jacqui Jackson proves you can have your cake and eat it too after opening her very own baking school last November in the picturesque surroundings of Yorkshire Sculpture Park.
Looking to impart her knowledge and skill on to other home bakers, Jacqui’s Yorkshire Baking Club offers day courses in traditional baking methods and signature recipes to fall in love with old fashioned baking again. From favourite cakes and pastries to breads and bakes stretching Yorkshire to Europe, the Yorkshire Baking Club has a range of fun and relaxed courses for you to get stuck into under the guidance of Jacqui.
Like most people, Jacqui had her first taste for baking as a child; even while at school, she knew her heart lie inside of the mixing bowl and so was strongly focused on forging a baking career.
Jacqui spent 32 years in the baking industry, developing popular sweet treats and
baked goods that we all know and love. On landing her first job making pork pies for a Barnsley butcher, Jacqui then moved to Lyons’ Carlton factory where she developed recipes for their chequerboard Battenberg, fruit-laden mince pies and fat-less Swiss roll. She even designed the very first caterpillar cake which has become a birthday icon. From bread making to confectionary, Jacqui’s technical ability meant she was often snatched up by large British and European companies quicker than a hot batch of biscuits, working on projects for brands like McVities and Mr Kipling. With a degree in baking science, Jacqui also spent 15 years training bakers to mass produce bakes, focusing on turning sought- after recipes into a commercial success. Based in a former agricultural barn on the edge of the sculpture park, Yorkshire Baking Club’s rural headquarters has stunning views over the countryside with Highland cow and pheasants roaming free.
Inside, the barn has been transformed into a show-stopping set-up that features individual baking stations, grey gloss kitchen units and Bake Off style slide and hide NEFF ovens, all supplied by The Kitchen Company at Worsbrough.
The seasonal courses focus on the core elements of baking - bread, cakes, pastry and biscuits – each using tried and tested recipes that you can recreate at home. On your marks, get set, bake with the simple cakes and traditional bakes courses featuring popular teatime treats such a fruity flapjack, fudgy brownies, melt-in-the-middle muffins and a classic Victoria sponge. For an extra slice of baking pleasure, Jacqui is looking forward to welcoming amateurs and professionals to her grand opening this March with demonstrations on continental breads and cake decorating. And Bake Off royalty will be swapping the tent for the barn as 2014’s Queen of Buns, Nancy Birthwhistle, will be answering questions and giving demonstrations.
