When our friend Dave Hlubek passed away last year, the first thing I thought about was how ex- cited he was when we printed our first issue of Gritz magazine in June, 2002 that featured a piece on his chicken recipe. Dave (Molly Hatchet) was in The Southern Rock Allstars at the time, and I’ll never forget his excitement when we unveiled the first issue at Wolf Jam. He asked for extra copies for his mother and friends. This reprint is a tribute to the big man. We miss ya Dave. - MBS

WATERING SOUTHERN FRIED CHICKEN


(Or 101 Ways to Cook Yardbird)


I don't know about y'all, but fried chicken done right is


pretty hard to beat, especially if its combined with my light


your ideal meal. But if it is what you're


drooling for, let's dig in, let's begin, but let me warn ya, this is gonna be messy!


What You'll need: - 1 or 2 whole cut up fryers - Eggs, 1 large or 2 medium - 2 cups Milk or Buttermilk - White all-purpose flour - Salt & pepper

- Cooking Oil - Large skillet (black cast iron ones are excellent) - 2 Mixing Bowls - A brown paper bag


(No, the paper bag is not for covering the head of some ugly bimbo you picked up at the last gig. It's for use as a chicken part shaker.)


1. Clean the chicken thor- oughly using warm water. Remove all the unwanted fat from the pre-cut fryer.


2. Place your frying pan on the burner, fill the pan about 1/4 full of cooking oil. Don't turn the burner on ‘till you're finished prepping the chicken.


3. Use a large mixing bowl, blend the eggs and milk (or buttermilk) using a fork, or better still an electric mixer. Add salt and pepper and blend until creamy.


4. Take the all-purpose flour and pour plenty into a plastic or brown paper bag. This will
