Light summer lunch
Ian Senior of Keelings Fish Bar, Barnsley cooks an easy, gluten-free summer lunch of salmon with pasta, basil and parmesan with sweet British strawberries for afters.
• 5 basil leaves sliced finely • 200ml double cream
• Few parmesan shavings, to garnish
• Salt and freshly ground black pepper
Method:
1. Cook the pasta in a large pan of boiling well-salted water until al dente. Drain and keep warm.
For the pasta Ingredients:
• 200g gluten- free fusilli pasta • 1 tsp salt (for pasta water)
• 240g boneless salmon fillet sliced
• 1 tbsp unsalted butter • 2 shallots diced
• 1 garlic clove finely chopped • 5 plum tomatoes halved
For the dessert
Ingredients: • 400g British strawberries • 1 tbsp icing sugar • 4 basil leaves sliced finely • 100ml double cream
Method:
1. Gently remove the green stem and wash in salty clean water then drain
2. Meanwhile, put the butter into another pan and melt over a medium heat then add the shallots and gently sweat for a minute
3. Add the salmon, garlic and tomatoes cook for a minute pour in the cream and season with black pepper and salt.
4. Toss the pasta into the sauce and add the basil. Divide between 2 warm plates and serve immediately with the parmesan on top.
2. Place the whole strawberries in a large bowl then add the icing sugar gently move around so they all get coated then add the shredded basil and gently move to two plates.
3. Add 100ml double cream to the bowl with the basil and icing sugar then whisk until firm. Spoon over the strawberries and serve.

Frozen Strawberry Daiquiri
The sweetness of strawberries and the kick of lime make this classic daiquiri a real crowd pleaser of a cocktail.
Preparation time 10 mins Serves 2
Ingredients
• 500g strawberries, hulled
• 200g ice • 100ml rum • Juice ½ lime
Garnish
• 1 strawberry, halved • 2 slices of lime • 2 cocktails sticks
Method
1. Blend the strawberries then push the resulting puree through a sieve to remove some of the seeds. Tip the sieved puree into the blender again and add the ice, rum and lime juice. Blend again and divide the mixture between 2 Martini glasses.
2. Thread the lime slices and strawberry halves onto the cocktail sticks and place onto the edge of the glass, serve immediately
Mint lemonade
This lemonade recipe makes for a refreshing non-alcoholic cooler on warm days and a grown-up alternative to cocktails on summer nights.
Preparation time less than 30 mins Serves 4
Ingredients
• large handful fresh mint, leaves picked
• 6 lemons, juice and zest of 3 • 3 tbsp sugar cane syrup • sparkling mineral water, to top up
Method
1. Place the mint leaves into a tea towel and bruise with a rolling pin.
2. Add the mint to a pitcher, with the lemon juice and zest and sugar cane syrup.
3. Top up with sparkling water. Mix the cocktail well and add more sugar cane syrup, to taste.
4. Chill in the fridge
