t’s one of our favourite times of year when it’s deep summer and the seasonal fruit and veggies are all around in joyful abundances. Not yet that time when if you are offered another courgette verging on a marrow, you’re thinking up ways of politely declining. We’ve been running our summer
courses at the Deer Park Hotel in Honiton and their walled garden is bursting with fresh produce. All very appealing when you want something light to eat in this hot weather. Beans, artichokes, lettuce, all manner of herbs, tomatoes, peas, strawberries, peaches, apricots and even gooseberries – so sweet and not at all eye- puckering that you can’t leave them on the bush. We were lucky enough to be in Italy and France

earlier this summer and the overload of fruit in the markets is
remarkable. Cherries, apricots, peaches, melons; all perfectly ripe and to be honest too cheap to not load up; cherries at 2 euros/kg anyone – I’ll take 10! In fact we did. Well maybe not the 10kg, just 2 or 3 that we managed to get in hand luggage well wrapped in case of spillage. The ones that weren’t eaten fairly quickly after getting home were made into the fab cherry, orange and chocolate tart that follows.
If you haven’t got a load of cherries to use, apricots, peaches and nectarines will all work well instead.
