ummer in Oklahoma means blueberries, raspber- ries and blackberries are in abundant supply. This is especially true for East Central Electric


Cooperative members Tim and Betsy Endicott. They are the owners of Endicott Farms in Liberty-Mounds, Okla., a popular berry picking destination in northeast Oklahoma. The pair purchased the 35-acre farm in 2006 with the intention of growing pecans. Today they have 20 acres of Kanza pecan trees. In 2010 they added three acres of blackberries and northern highbush blueberries. “We were mainly interested in pecans. Adding the ber- ries was a wild idea,” said Tim Endicott who has a degree in horticulture from Oklahoma State University. Northern highbush blueberries are native to Michigan and are difficult to grow in the hot, dry climate of Oklahoma. But according to Endicott, they’re what peo- ple want because they produce the best berries. Endicott and his wife both have full-time jobs outside the farm. He owns and operates a tree care and

landscaping business; she works a corporate job in Tulsa. The Endicotts’ kids, Leo, 5, Henry, 3, and Annabelle, 1, enjoy helping around the farm—though for the younger two helping is synonymous with eating berries. When it comes to consumption, Endicott said it’s best to wash the berries just before eating them. There are a couple different methods for freezing berries. He said some people wash them, lay them on baking sheets and wait until they dry to freeze them; others freeze them and wash them later. Frozen berries are perfect for pan- cakes and baked goods during the winter months. Berry picking season at Endicott Farms runs from
