Page 29 Pakora Pancakes
Pakora pancakes are a healthy take on the Indian classic deep fried pakoras. These savoury pancakes are very easy to prepare and don’t take too long to cook. They can be turned from a snack to light lunch served with a salad. Can be cooked and frozen in advance; just thaw, heat and serve.
Prep time: 10 mins Cook time: 15 mins Makes: 6
Ingredients: 250 ml cold water 250g gram flour 100g of fresh spinach 1 medium onion (roughly chopped)
1 garlic clove
1 medium egg beaten 1 teaspoon salt
1 teaspoon garam masala
1 teaspoon dried fenugreek leaves (optional) 1 – 2 chillies, chopped (optional) 6 tsps. Sunflower or coconut oil
Cheat’s tip: Replace the dry spices with your favourite Curry On Cooking Kit which are all made from 100% pure herbs and spices. (Madras, Jalfrezi, Balti, Bombay Potatoes, Korma or Tikka Masala).
Method:
Place all the ingredients in a blender with the water, blitz until the mixture resembles the consistency of regular pancake batter. Coat a non-stick frying pan with ½ tsp of oil. Heat until the oil is hot. With a ladle pour and spread the batter on the pan into a thin round pancake. Cook, wait until the edges dry out and turn a golden brown. With a spatula flip over. Let the other side cook for about a minute or until it turns a lovely golden brown and crisp. Serve hot with a mint yoghurt dipping sauce, pickle/ ketchup and a green crisp, salad!
