BECCI HIGHLIGHTS HER FAVOURITE RECIPES IN THIS ISSUE…
After some frivolous festive indulgence I’m looking forward to some lighter meals over the coming weeks. Luckily this issue of the magazine has plenty of inspiration, so much it was difficult to choose!
To start
PAGE 12 – QUINOA SALAD WITH FETA, TENDERSTEM®
AND POMEGRANATE
I love every ingredient in this dish. What a great salad to take to work in your lunch box or serve as a simple, clean starter for some healthy entertaining. Quinoa is a delicious base, while the crunchy broccoli, salty feta and sweet pomegranate seeds are a match made in heaven – delish!
For main PAGE 39 – VEGEREE
Kedgeree is a regular dish in my house. I get the smoked haddock from Bristol farmers’ market every Wednesday, but I am intrigued by this veggie version. Aubergines are a meaty veg so I can see them working well and am looking forward to trying it.
For pud PAGE 21 – MOCHA MOUSSE
You can’t beat a melt in your mouth chocolate mousse and this recipe is pure and simple. Just chocolate, coffee, eggs and a tiny bit of sugar mean that it isn’t terribly bad for you either (that’s what I’m telling myself anyway).
