Cheap but certainly cheerful!
❤ Half head of broccoli and half head of Romanesco caulifl ower, broken into pieces
❤ 425ml milk ❤ 40g fl our ❤ Half a leek, fi nely chopped ❤ 40g butter ❤ 100g Y-Fenni ale and mustard cheddar (or any strong cheddar), grated ❤ Salt and pepper to taste

1 Boil the vegetables (excluding the leek) for 5 min- utes. Drain and tip into an ovenproof dish. 2 Heat oven to 220C/200C/gas 7.
3 Put the saucepan back on the heat and make a cheese sauce: melt the butter and add the leek. Gently cook until the leek is soft, then stir in the fl our over a low heat. Remove from heat and mix in some of the cold milk, a little at a time. When it’s blended in, pour in the rest of the milk and heat gently over a low heat, stirring constantly. When it’s nearly boiling, stir in most of the grated cheese.
4 Pour the sauce over the broccoli and caulifl ower, sprinkle with the remaining cheese and bake for 20 minutes, until browning and bubbling.
