HALLOWEEN WHOOPIES Ingredients:
115g soft unsalted butter 200g caster sugar 1 large egg 1½ tsp vanilla extract 225ml buttermilk 1 tsp bicarbonate of soda ½ tsp baking powder 275g plain flour
Filling:
200g soft unsalted butter 400g sifted icing sugar 1 tsp vanilla extract 1 tbsp milk Orange food colouring
1 Preheat the oven to 1800 C/Gas 4.
Grease two whoopie pie tins with a little softened butter.
2 Sift together the flour, baking powder and bicarbonate of soda and set aside.
3 In a separate bowl, cream the butter and sugar together until light and fluffy .
4 Add the egg and vanilla and beat until well combined.
5 Fold in half the flour mixture, followed by half the buttermilk. Repeat with remaining ingredients.
6 Drop 1½tbsp or a level small ice cream scoopful of batter into each well of the tins.
7 Bake for approximately 12 minutes or until the whoopies feel just firm to the touch.
8 Allow to cool in the tins for five minutes before transferring to a wire rack to cool completely.
To make the filling:
Beat the butter with an electric whisk until light and fluffy. Slowly beat in the sifted icing sugar and vanilla, adding milk as needed until well incorporated. (Add drops of orange food colouring to create an orange cream). Generously spread your chosen filling with a palette knife onto one half of the whoopie before placing the other half on top.
For the Decorations you will need:
Orange and black coloured whoopies, a box of Halloween cutters, a bit of royal icing, piping bag and a large sprinkling of bright orange edible glitter and lots of imagination!
FUNKY JELLY CROCS Ingredients:
1 packet of lime jelly White marshmallows Handful of grapes and raisins
1 Make the jelly according to the packet and pour into small clear plastic cups or shot glasses and leave in the fridge to set.
2 Take the marshmallows and cut into strips. Then cut a serrated pattern along one edge to create the ‘teeth’. Apply the marshmallows to the side of the cup (the cut edge of the marshmallow should stick to the side of the cup without too much effort).

3 To finish the crocodile, cut a grape into quarters. Make a slit into one of the cut edges of the grape and push half a raisin into the cavity. Repeat. Sit the grape quarters onto the top of the jellies to create the eyes.
