SIMPLE PLUM AND HAZELNUT CRUMBLE


 600g Plums  1 tsp Ground cinnamon  75g Light soft brown sugar  125g Plain flour  50g Butter, chilled and cubed  50g Roasted chopped hazelnuts


1 Pre-heat oven to 190°C, Gas 5. Halve the plums, remove the stones and slice.


2 Place the plums in the base of an ovenproof dish, sprinkle with cinnamon and 25g of the sugar, then stir the mixture to make sure the plums are evenly coated.


3 Sieve the flour into a large bowl and rub in the butter until the mixture resembles a crumble. Stir in the remaining sugar and hazelnuts.


4 Spoon the crumble topping over the plums and spread evenly.


5 Bake in the centre of a pre-heated oven for 35 minutes until top is golden and crunchy. Serve with a creamy vanilla or clotted cream ice cream.


To add apple, peel


and chop cooking apples and place in a pan with lemon juice to stop then browning, sprinkle with sugar and add a little water, cook to the required bite and layer up with the plums. Alternatively layer up with blackberries.
