lan Loftus knows his game. Having run shoots and reared pheasants for over 40 years, he now heads up Bampton Game, a family-orientated
Devon business producing gourmet pheasant products using only locally sourced meat, both from his own and neighbouring shoots.
Their range includes an array of
carefully thought out burgers and sausages, as well as fresh cuts of marinated meat. “As far as I know we are the only people in the country doing this” he noted.

interesting one. Having run shoots and carried out countryside conservation work most of his life, as the years advanced he realised he needed to do something slightly less strenuous. “Running shoots is a nice life, but a hard one. Out every day in all conditions, it takes its toll.”
“For me it was so simple. Game meat is high in protein, low in fat and the birds live a good life, despite the criticism surrounding their method of demise. Currently, 80 per cent of all pheasants that are killed in the UK are exported to the
continent, and many people do not know how to cook pheasant well so avoid it when choosing their weekly shop.” He therefore looked to address this
trend by making game products that would appeal to a wider audience, realising that while taste was paramount, they also needed to be simple. “It took me almost a year to perfect my recipes. Pheasant was difficult to work with at first because it is so low in fat. It would either dry out or fall apart when cooked.” With the addition of small amounts of high quality chocolate, Alan realised he could release the natural fats to moisten
