The effect of “comfort foods” on stress and mood are real and powerful in some people – and there is nothing more comforting than a steaming bowl of stew whilst curled up on the sofa. So if it doesn’t work – doesn’t it make us feel better anyway…. so do we really care?
There are as many ways of cooking this dish as there are of paella! You can add a pigs trotter (I don’t like the glutinous texture this gives so tend to leave it out!) or lamb, you can also add any vegetables you like to ring the changes – celery and cabbage both work well. All root vegetables go very well with this stew also so just pick whatever is seasonal and fresh.
Ingredients; for 4: 200g dried chickpeas
1 piece of beef (shin, ribs or similar) 1 piece of pork (loin or similar) 1 piece of pork belly 1 piece of Serrano ham bone Quarter boiling fowl chicken (gallina) 1 whole bulb of garlic
2 parsnips, peeled but left whole 3 carrots, peeled & chopped into large chunks 2 small turnips, peeled but left whole 1 sweet potato, peeled and cut into large chunks 4 potatoes, peeled and cut into large chunks Bunch of chard leaves, roughly chopped 3 litres of water
Soak the chickpeas overnight in water with a pinch of bicarbonate of soda. Put the drained chickpeas in the water with all the meat, bone, carrots and garlic bulb, bring to the boil, then simmer, skimming off scum as it appears (this will be for about 15 minutes), for an hour and a half.
Add the parsnip and turnips and cook for 30 minutes before adding the potatoes and sweet potato. As soon as the potatoes are tender, add the chard, cook for a further 5 minutes, season to taste and serve.
