Lets begin Summer with Easter!
Tis year Easter is late, almost one month behind the norm and if young succulent spring Lamb doesn’t make your mouth water then why not try something different this year with slow roasted belly of Pork. As well as being a much leaner meat for your health, Pork is also a much leaner price for your wallet. Slow roasted means exactly that, the cut is cooked on a very low heat for around 5hrs so that the meat should be tender and the skin, honey coloured, crispy and delicious.
I like to serve my slow roasted belly of pork with an onion mash and spring greens as neither overpower the delicate flavour of the meat and it gives a healthy twist on the more traditional roast potatoes and seasonal veggies. Slow Roasted Belly of Pork is one of my favourite dishes on our new Spring menu at Tudor Barn Eltham and if cooking for your family doesn’t sound like fun, why not book a table and celebrate Easter with us!
Slow Roasted Belly of Pork (serves 4)
1kg Pork belly 2 sweet apples chopped 2 bay leaves 1 bulb garlic in half 6 sprigs of thyme
500ml cider 2 shallots sliced 2pz of salt 8 whole peppercorns 4 ml olive oil
Pre heat your oven to 140 degrees centigrade or gas mark one. In a baking tray spread evenly the chopped apples, shallots and garlic and then place on top of these the thyme, peppercorns and bay leaves. Cover all ingredients with the olive oil and place in the oven 5 minutes.
Meanwhile take the Pork belly and pat the skin dry otherwise your crackling won’t be crisp and score the skin with a sharp knife. Rub the salt into the skin making sure it is evenly covered. Remove the baking tray from the oven and place the meat on top of all the other ingredients.
Leave in the oven for about five hours or until the meat is tender and the skin is honey coloured, crispy and hard to the touch.
When ready to serve flip the pork on the cracking side and slice as desired. Serve with a simple onion mash and sautéed spring greens.

Easter Concert
Greenwich Soul Choir will be performing their Easter concert at Tudor barn on the 17th April from 5pm-6pm. Come along and listen to some great sounds! Free entry.
Easter Egg Hunt
Sunday 24th April between 11am - 2pm (last entry at 1pm). Challenge open to children up to the age of 10 years. all children must be accom- panied by a responsible adult. Pick up your entry form on the day from the park rangers stand by the moat island. All easter eggs donated by the Tudor barn.
