Good Eats IN SOUTHEAST OKLAHOMA


Citrus Streusel Bread

INGREDIENTS 1 (18 ¼-oz) pkg. lemon or orange cake mix 2 T brown sugar 1 tsp. cinnamon 1 T. cold butter ½ c. chopped pecans 1 (3.4-oz.) pkg. instant vanilla pudding mix


DIRECTIONS


In a small bowl, combine 2 tablespoons cake mix, brown sugar and cinnamon; cut in butter until crumbly. Stir in pecans; set aside. In a large bowl, combine pudding mix, sour cream, eggs, oil and remaining cake mix; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Pour into 2 greased, 8 x 4-inch loaf pans. Sprinkle with pecan mixture. Bake at 350°F. for 45 to 50 minutes or until a toothpick inserted near center comes out clean. Cool in pans for 10 minutes before removing to wire racks. Combine confectioners’ sugar and enough milk to achieve desired consistency; drizzle over warm bread. Tiled 2 loaves.


White Chocolate Fruit Salad

INGREDIENTS 1 can chunk pineapple 1 (3.4 oz) pkg. instant white chocolate pudding 1 can mandarin oranges 1 (8 oz) carton sour cream


1 can fruit cocktail 1 (8oz) carton Cool Whip 1 (3.4 oz) pkg. instant vanilla pudding


DIRECTIONS Drain fruit, saving juice. Mix 1 ½ cups of the juice with sour cream, Cool Whip and both puddings. Fold in fruit. Do not use mixer. Chill until set.
