After studying to be a chef during a two year scholarship in Switzerland, Sean Millar found a shared passion for food with Sheila Benson and this is where their journey began. With location being key to this restaurant, it is clear to see why it is a favourite with customers. Te front of the restaurant has glass sliding doors, perfect on a sunny day to enjoy your food whilst feeling a refreshing breeze through the open front. Upon entering Pruno I was met by a relaxed dining atmosphere. Te open kitchen means guests can watch Sean and his team at work. With the low lighting provided by industrial style


Sean’s recommendations: Josper grilled sea bass with wild samphire grass, pea, clam and chorizo linguine (Te samphire grass is wild and handpicked from Fleetwood in July and August only.)

lights an intimate atmosphere was created even though the restaurant was almost at full capacity. With most of the tables full by 8pm, I realised that this eatery proved popular among the locals. After being shown to our table I was able to take in the surroundings. Spread across two floors, the lower floor caters for families and individuals and offers a more characteristic and intimate feel whereas the upper floor is available to hire and allows 10-100 customers to enjoy that special occasion. Te menu offered us a small but more than ample choice of mouth-watering dishes. With all the ingredients sourced locally, and most of the vegetables and potatoes grown by a friend of Sean’s, this contributed to the ‘family’ element of the restaurant. Te wine menu was vast but I decided on a large glass of French Sauvignon Blanc while my guest chose a fruity Tempranillo red to accompany our meals. I opted for Cornish crab, king prawn and avocado salad to start, which was recommended by Sean as a favourite dish for the summer months. My guest chose the crispy fried squid with lemon mayonnaise. When the starters came we were not disappointed and I was not over faced with a huge portion. After our starters, we were ready for our mains courses of Goosnargh duck breast with dauphinoise potatoes on a bed of creamed spinach and sirloin steak with peppercorn sauce with chips and a summer salad. Te duck was cooked perfectly and one of the best I have had for a while. Again the portion sizes were ample and I was left with just enough room for pudding. Having been defeated by his steak my guest


left the desert to me and with the crème brulee catching my eye at first glance of the menu I knew this was the perfect finale to dinner. Pruno lives up to its name - a concoction


from a mixture of ingredients - and offers customers everything they would need for a delicious evening meal. With the food being very reasonably priced it offers guests somewhere new to experience slightly out of the hustle and bustle of the city centre but it makes up for that with its vibrant ambience. Te cheerful staff and Sean and Sheila’s knowledge of everything food; make this small but atmospheric restaurant a success and I would highly recommend a visit.
