BREAD SALAD (SERVES 4) INGREDIENTS
TOMATO and 6 ripe tomatoes, seeded and diced
handful cherry tomatoes, some whole, some halved 1 cucumber, seeded and diced
1 red and 1 yellow pepper, seeded and diced 1 red onion, finely sliced
1 ciabatta loaf or French stick, preferably a few days old, torn into bite-sized chunks
120ml olive oil red wine vinegar, to taste 15 basil leaves, roughly torn
METHOD
– Throw all the vegetables into a large bowl with the chunks of bread. Season with salt and pepper and leave for 20 minutes to allow the juices to mingle. – Add the olive oil and vinegar to taste, season with more black pepper and stir in the basil leaves. This is delicious on its own – or served with pretty much anything, actually!
