Jalapeño Corn Bread Contributed by Maxine Byrd, CEC’s Holiday Collection Cookbook


INGREDIENTS


2 pkgs. Corn bread mix 2 eggs


1 onion, chopped DIRECTIONS


1 can whole kernel corn w/liquid 2 c. Cheddar cheese, grated 3 pickled peppers, chopped


Mix well and spoon into muffin tins that have been sprayed with Pam. Bake at 450°F. for about 15 minutes until browned.

INGREDIENTS 1 1⁄2 c flour


3⁄4 c. butter


8 oz. cream cheese 4 c. milk


1 c. pecans DIRECTIONS


Mix flour, butter and chopped nuts. Press mixture into 9” x 13” cake pan. Bake for 20 minutes at 350°F. Mix Cool Whip, powdered sugar and cream cheese. Spread mixture on cool crust. Beat both puddings and milk for 2 minutes. Spread on above mixture. Top with remaining Cool Whip. Refrigerate for at least 3 hours.
