Favorite Recipe for Summer!


Why Crystal is one of our favorite Healthy Moms!


After earning a Bachelor of Science degree in Health Science and Secondary Health Teaching Credential from California State University, Long Beach, she taught High School Health before becoming a mom and deciding to stay home with her kids. Though she wouldn’t trade this precious time with them for anything she has missed the teaching, sharing and learning that went on in the classroom. After moving to the Twin Cit- ies in 2009 and having a second child, She has redirected that energy into writing about all things health as they relate to the many roles Mamas play in the lives of their kids, family and community. In addition to her passion for health she greatly enjoys cooking and hopes to be able to share both with many other mamas out there!


Why a healthy diet is important the Toews family:


“We all want to give our family and kids the best we can. For me a big part of that is a healthy diet. By providing them with healthy foods I not only give them the opportunity to develop a taste and preference for not only good tasting, but good for you food, I also give them a stronger immune system, decreased risk of diseases from learning disorders to heart disease, an opportunity to learn about food, our earth, colors, fl avors, cultures, and the list goes on. A healthy diet is key to a healthy kid- emotionally, socially, intelectually, and physically.”


Crystal’s Philosophy on Nutrition:


“I am not “against” fat, salt, carbs or any of the others. What I do strive for is “whole foods”- foods closest to their natural state. I believe our bodies process foods best when they have not been altered and our overall health is better without pesticides, preservatives, food dyes, hydrogen ated oils, etc.”

Lettuce Wraps: 2 lbs. grilled Chicken Breasts cut into strips 12+ Green Lettuce Leaves Strips from 1 Zucchini and 1 Carrot (I use the vegetable peeler to make strips- do not peel the carrot, there are a lot of nutrients in that outer layer) or 1 package Broccoli Slaw 1 can Water Chestnuts 1 cup Roasted Peanuts 1 can Mandarin Oranges 1/8 cup toasted Sesame Seeds


Sweet & Spicy Sauce: 3 Tbls. Hoisin Sauce 2 ½ Tbls. Cider Vinegar 2 Tbls. Soy Sauce 2 tsp. Dark Sesame Oil 1 tsp. fresh grated Ginger (I buy a ginger root and store it in a ziplock in the freezer until needed- I then use a vegetable peeler on the frozen root to remove the skin on the portion I plan to use and then shred it using the “fi ne” side on my cheese grater) ½ tsp. crushed Red Pepper ½ tsp. minced Garlic


Peanut Sauce: 1/3 cup Peanut Butter 1/4 cup Honey 2 ½ Tbls. Soy Sauce Juice from 1-2 Limes 1/8 tsp. ground Red Pepper


Combine ingredients for Peanut, and Sweet & Spicy Sauces in separate bowls.


Spread selected sauce or both on lettuce leaf and top with chicken, vegetables, oranges, water chest- nuts, peanuts and sesame seeds. Enjoy!
