Cook it this Way!
Studies have denounced grilling methods for releasing harmful carcinogens in meat. Because barbecuing involves cooking meat for longer amounts of time at a higher temperature, there is an increased chance of forming heterocyclic amines—HCAs—which can cause cancer. HCAs form when amino acids (the building blocks of proteins) and creatine (a chemical found in muscles) react at high cooking temperatures. Researchers have identified 17 different HCAs resulting from the cooking of muscle meats that may pose human cancer risk.
So, before charring your burgers, consider the health risks involved. Marinate your meat before tossing it on the grill and baste it continuously while cooking. This will keep the meat moist and prevent it from burning. To cut down on grilling time, you can bake meat before finishing it up on the barbecue at a lower temperature to get that smoky flavor. Another great idea - make your meat medium- rare, and then cut it in to smaller pieces to reduce grill-time. Use natural charcoal options such as Wicked Good Charcoal (
www.wickedgoodcharcoal.com) or Cowboy Charcoal (
www.cowboycharcoal.com) available at Lowe’s and Whole Foods.
To add some spice to your meal, use home grown herbs to season everything from your meat to your veggies. Check out Captain Lou’s Organics at
www.captlous.com for USDA organic signature seasoning blends that will enhance the flavor of your food and have your taste buds singing!
Put this on the Side!
Barbeques just aren’t barbeques without sauces and sides. Try natural and organic options for ketchup, mustard and barbecue sauce such as Muir Glen’s (
www.muirglen.com) USDA-certified organic ketchup that is sure to add the final touch! Top with a whole grain bun and voila!
Grilled veggies and fruits such as Asparagus and Mango from your garden or a local farmer’s market are sure to round out the meal. Or Kabob them together for a fun and colorful alternative!
