Blackberry and
pear crumbles
Everyone will love having their
own individual mini pudding –
especially when they find out
it’s lower in sugar, but still high
in fruity flavour.
Serves 4
Preparation 20 minutes
Cooking 20 minutes
2 pears, peeled, cored and cut
into bite-sized pieces
400g/14oz blackberries
artificial sweetener, to taste
For the topping
50g/2oz self-raising wholemeal
flour
1 tsp cinnamon
¼ tsp allspice
4 tbsp low-fat spread
2 tbsp soft brown sugar
low-fat custard or very low-fat
natural yogurt (optional), to serve
n Preheat the oven to
190°C/375°F/gas mark 5.
n Place the fruit and sweetener in
a large bowl, add 4 tablespoons
water and mix well. Divide among
4 individual ovenproof pie dishes
(or you can use a large single one,
if preferred).
n Sift the flour, cinnamon and
allspice into a bowl and rub in the
spread with your fingers until the
mixture resembles breadcrumbs.
Spoon this over the fruit, then
sprinkle with the sugar. Bake for
15-20 minutes, or until bubbling
