SUCCESSION AND SUCCESS AT RICCA DESIGN STUDIOS Industry veteran Lenny Condenzio FCSI has retired after a sparkling career, setting standards and inspiring colleagues in foodservice consulting over the past 51 years. Effective now, he has passed the baton to Sean Callnin FCSI, who takes on the mantle of president and CEO at Ricca, while Tarah Schroeder FCSI makes the move to managing principal and COO. The two longtime leaders within the Ricca structure will carry forward Condenzio’s legacy and vision.

SUSTAINABLE SYSTEMS FOR CATHAY DINING Cathay Dining, a subsidiary of the Cathay Group, has unveiled a redesigned state-of-the-art warewash system, designed to address the sustainability challenges of in-flight catering operations. The system features dedicated conveyors and compactors that efficiently separate food waste from the general waste collected from inbound flights, increasing food waste recycling capacity by 200%. “We are proud to lead the way in sustainable practices and operational excellence within the inflight dining industry,” said Cathay Dining CEO Agatha Lee. The segregated food waste is moved to the Organic Resources Recovery Center on Lantau Island, which uses anaerobic digestion to convert organic waste into renewable energy. It can process up to 500 tonnes of food waste daily, generating sufficient electricity to power approximately 8,000 households annually. The process significantly contributes to Hong Kong’s renewable energy supply.

THE MICHELIN GUIDE TO LAUNCH IN SAUDI ARABIA As the foodservice market continues to boom in Saudi Arabia, the world’s most famous restaurant guide has announced that its latest partnership in the Middle East region will be with this emerging gastronomic destination. While principally focused on the cities of Riyadh and Jedda, the guide will also begin to explore the many other diverse regions of the Kingdom. The selection for the inaugural edition will be unveiled at the end of this year, with publication of the guide slated for 2026. “These past few years, our Michelin inspectors have been keeping a watchful eye on The Kingdom’s culinary progression and continue to relish the wonderful spectrum that this fast-developing country has to offer,” said Gwendal Poullennec, international director of the Michelin Guide.
