SUSTAINABLE CHOCOLATE ALTERNATIVE TAKES FLIGHT IN DENMARK Endless Food Co is a new sustainable venture from Matt Orlando, the chef who pioneered a zero-waste approach at his Copenhagen restaurant Amass.


While the restaurant closed in 2023, Orlando and his team – Christian Bach and Maximillian Bogenmann – are yet again carving a path for new ways of working. This time the focus is on chocolate. “We were brought together by a shared belief that the transition to a greener and more equitable future food system will be driven by flavor,” says the trio who has developed THIC (This Isn’t Chocolate) as an alternative to cocoa-based chocolate, using upcycled brewers spent grain, keeping the flavor and texture but losing the adverse impact on the environment caused by cocoa production.


THIC is currently used in pastries, ice creams and coatings – including the pain no chocolate – and customers in Copenhagen reported sales of over 10,000 pastries using THIC in the last six months of 2023.

ROBOTS INTRODUCED AT UK UNIVERSITY TO MEET STUDENT DEMAND FOR CONVENIENCE Contract caterer Elior has introduced new autonomous delivery robotics to deliver food to students’ rooms at the University of Roehampton, London, UK. Elior noticed that many students preferred the ease and convenience of ordering takeaways to their halls of residence. The company introduced the Roehampton robot, which can deliver to students without human interference, traveling across all terrains and even roads. The built-in AI technology allows it to learn the best routes across campus and store that information for the next delivery, guaranteeing a quick delivery time.
