EASTER is upon us and Good Friday is traditionally a dav when everyone eats fish.' The sea bass I cooked was


fanned, but Giles does often get wild sea bass which has a much better taste. At the moment the wild sea bass comes from the South coast. His shop will be packed


with a variety of fish for Easter, he is open Good Fri­ day until noon.


Ingredients


• 2 sea bass fillets • baby leeks or red onion • one or two sticks celery • 1 carrot • white wine/vermouth • butter ail alternative way


• 2 sea bass fillets O 1 head of fennel • 1 red onion • 1 stick celery ®1 lemon • Ricard or Pemod


1. Depending on which set Method


of vegetables you use, firstly, cut the vegetables into juli­ enne strips and blanch them in the microwave for a couple of minutes. Drain well. 2. Cut two large sheets of


greaseproof paper, fold each one in half, open out and grease the right hand side with melted butter. 3. Lay one fillet of sea bass


on each greased piece and top with blanched vegeta­ bles. Season and add one tablespoon dry white wine or vermouth or Ricard if using, over each fillet. 4. Fold the other half of


the greaseproof paper over fish and pleat round the edge to make a sealed parcel., 5. Place on a baking tray


and cook in a hot oven for eight to 10 minutes. . ; 6.. Serve in the paper,


with purple sprouting broc­ coli or. any green vegetable and new potatoes.
